Into the woods

Autumn is the season for wild mushrooms! We've been nagging Chef Phil to take us on one of his foraging expeditions and this week it finally happened.

Mushrooms are always present in pine plantations because the pine trees rely on a symbiotic relationship with the mushrooms to grow, so the mushroom spores are introduced when the trees are planted.

We recommend foraging mushrooms with someone who knows what to look for - some wild mushrooms can be deadly if consumed, so make sure you can easily identify the variety before consuming.

We foraged a few basket-fulls of Slippery Jacks and are currently using them in our version of the classic Shepherd's Pie. More mushy dishes coming soon!
