I've been asked this question so often since we had our launch party on September 30. Believe it or not, I don't find this annoying at all. I love it! It means there are people out there who are interested in what we are doing. 

I've been so transparent throughout this whole process which is the reason why I didn't block up the windows with newspaper like so many new businesses do when they are setting up. I want people to see the progress. I want people to stop and ask us what's going on. I want people to get excited about the space. 

It's been almost two weeks since the launch and we still haven't served our first customer. Why? It's all about the kitchen! It was only yesterday that our final two pieces of equipment arrived - the display fridge and the freezer. These items need to be on, working and storing food at the correct temperatures before I can invite local Council in for the final kitchen inspection. Same goes for the cool room, which was getting lots of attention from the refrigeration mechanic yesterday.

We are almost there! We plan on doing some dress rehearsals with friends and family as early as this Friday. I would love to get a day of trade in before our scheduled days off next week (we are closing on Tuesdays and Wednesdays initially) but I'm trying to relax and take each day as it comes.
